This Barbecue Rib Recipe slow spun on a Carson Kit and slow smoked in Weber Smokey Mountain Cooker is such a fun recipe to do. It marry's the slow smoking physics of the American Southern Barbecue tradition with the slow spun physics of the Brazilian Southern Barbecue Tradition. You must try and let us know what you think!
*Before we fire up the grill, lets do a quick equipment and ingredients check to make sure we have everything we need for this recipe?
1 Carson Medium Skewer
A large cookie sheet
A Sharp Knife (I love this knife!)
A good pair of tongs
At least 5 to 10lbs of charcoal
A Large cutting board
Sauce Pan or Small Skillet
A Basting Brush
1 whole rack of ribs
1 cup of BBQ Sauce
1/4 cup of BBQ Shake
Do you have everything listed above and is all of it in fine fresh working order?
Yes - (Then proceed to getting your grill on!)
No - (Either roll with what you got or wait until you're ready to rock.)
Step 1.) See Weber's instructions on how to light the Weber Smokey Mountain Smoker.
Step 2.) Slice the rack of ribs even into to two.
Step 3.) Weave the skewer through each half rack of ribs
Step 4.) Sprinkle with kosher salt
Step 5.) Season with your favorite BBQ shake
Now you're ready to spin your meat!
Step 1.) Check to see if the smoker has made it to temp. (Between 200 and 275 degrees)
Step 2.) Place loaded skewers on bottom or top row in the kit inside the smoker and let smoke for 3 hours. (The longer you wait the better!)
Step 3.) Once the ribs are ready baste the ribs with your favorite BBQ sauce
Let that spin a minute or two longer then clang the dinner bell because its time to get your nosh on!
Step 1.) Slice evenly through each rib bone right off the skewer.
*Slice as much as you like or re-season and place back in the grill (Top Row) until everyone is ready for more!
